THE KATZ STORY
Our culinary lineage spans the last 30 years. It began when we opened a restaurant in the San Francisco Bay Area, at a time when cooking local, seasonal, farm-fresh foods was in its infancy. This was a vibrant and creative period and we spent that first decade "behind the kitchen line" learning that the quality of the ingredients makes all the difference.

Later down the road as a grower and producer, we now create these ingredients with a simple mission: to produce genuine and authentic foods with integrity, and with love and respect for the land that sustains us.

Today, our family is proud to offer award-winning, certified organic extra virgin olive oils from our groves in California's Suisun Valley, barrel-aged vinegars from our historic stone Carriage House, and highly acclaimed field-collected honey and preserves...all made to nurture the soul and satisfy the palate.

ABOUT THE PRODUCT

The story of Rock Hill Ranch is all about a sense of "place"...where daily we go about the work of sustainable agriculture. Whether that is tending to the organic olive groves, or spending time in the Carriage House crafting our vinegar, or taking care of the heritage chickens that pasture under the olive trees, it is our unbroken commitment to small-scale farming.

All of the fruit in this bottling comes from our organically farmed ranch. The twenty acres sit on the southern tip of Suisun Valley, California, where breezes blow in from the west (Suisun means "west wind") creating a distinctive microclimate. The surrounding hills are full of compacted volcanic ash, called tuffo in Italian, creating a loamy soil...an ideal mix for growing olive trees. These are the same soil conditions that the Tuscans claim are responsible for making it the "best" region for growing olives...a claim we can now make for the Suisun Valley.

KATZ Rock Hill Ranch EVO contains these olive varieties:

Taggiasca and Casaliva... 100%, these varieties are native to the Ligurian and Lombardy regions of Italy respectively. Both are known for their soft and persistent fruitiness with sweet overtones producing a lush mouth feel.

ABOUT THE TASTE

KATZ Rock Hill Ranch Organic Extra Virgin Olive Oil has a very low 0.16 free fatty acid which shows the care with which this oil was made, (together with a peroxide value of 4.5 - an incredibly low reading that measures the oxidation in the oil - the lower the better!). This year's unfiltered oil again reflects the softer quality of this harvest due to the continued cool weather during the summer months of 2011. It has amazingly fragrant 'green' notes in the aroma and taste…from artichoke, to green almond and fresh herbs. The mouth feel is in balance with a rich, lush profile and a slightly more pungent finish than last year's oil, all reflecting the 'freshness' of the new harvest.

Harvested from November 29th-December 10th, 2011 with 290 cases produced.
