THE KATZ STORY
Our culinary lineage spans the last 30 years. It began when we opened a restaurant in the San Francisco Bay Area, at a time when cooking local, seasonal, farm-fresh foods was in its infancy. This was a vibrant and creative period and we spent that first decade "behind the kitchen line" learning that the quality of the ingredients makes all the difference.
Later down the road as a grower and producer, we now create these ingredients with a simple mission: to produce genuine and authentic foods with integrity, and with love and respect for the land that sustains us.
Today, our family is proud to offer award-winning, certified organic extra virgin olive oils from our groves in California’s Suisun Valley, barrel-aged vinegars from our historic stone Carriage House, and highly acclaimed field-collected honey and preserves...all made to nurture the soul and satisfy the palate.

ABOUT THE PRODUCT
Harvested November 10th to December 3rd 2009... the flagship of our KATZ brand and a six-time gold medal winner at the prestigious L.A. International Olive Oil Competition, KATZ Chef’s Pick is blended in small lots from oils harvested from olives grown on our certified organic and sustainably farmed groves in the Suisun Valley (on the eastern border of Napa). This historic agriculturally rich valley with loamy and sandy soils is an ideal growing region for the Italian varietals of olives planted there. Our goal each year remains the same…produce an excellent and high-quality oil that reflects the generous flavors, balance and harmony that come from good growing and harvesting practices.
KATZ Organic Chef’s Pick contains the following organic olive varieties:
Leccino... 50% of the blend, the character of this traditional Tuscan varietal has an outstanding balanced fruitiness with spicy and grassy overtones, and a mild to soft pungency.
Frantoio and Maurino... 35% of the blend, these classic Tuscan cultivars lend the rustic, bold charm with grassiness and artichoke flavors.
Taggiasca and Casaliva... 15% of the blend, these varieties are native to the Liguria and Lombardy regions of Italy, respectively. They are noted for their soft and persistent fruitiness with sweet overtones producing a lush mouth feel.
ABOUT THE TASTE
This year’s oil has a very low .11 free acidity reading and a 7.5 peroxide value, well below the international threshold and a sign of the oil’s very high quality. It comes from handpicked olives and unfiltered oil that has its usual rustic charm with grassy, floral overtones, rich fruitiness and a lush mouth feel, with good balance and a nice pungency in the finish. It enhances a wide array of foods and is the perfect condiment quality oil for the professional and home cook.
