Nona's Pancake Recipe
Makes about 16 medium sized pancakes
The most important thing about making great pancakes is that the ingredients should be at room temperature, and even more important, the eggs should be separated and the whites beaten to stiff peaks just before mixing the batter…and make sure your Branches preserves are also at room temperature!
Wet Ingredients:
- 2 eggs (separate and place the whites in a separate bowl)
- 2 cups milk (add beaten yolks to milk)
- 1/2 cup plain yogurt
- (2-3 tablespoons water to thin batter a bit before adding whites)
Dry Ingredients, gently mixed together in bowl:
- 2 cups flour
- 1/4 tsp baking soda
- 1 tsp. baking powder
- 1/2 cup bran
With a whisk, mix all wet ingredients together, except water, beat egg whites to stiff peaks, and have dry ingredients ready in a separate bowl.
Pour the wet into the dry and gently mix together with the whisk until lumps are gone (to keep pancakes fluffy, do not over mix). Adjust batter with a few tablespoons of water if needed. Carefully fold the whites into the batter with the whisk.
Heat your skillet and prepare with oil (we use a drizzle of our olive oil and wipe with a paper towel). Finish with a generous spoonful of
Branches preserves. Enjoy!
