Meyer Lemon Orzo Salad Serve warm as a bed for roasted or grilled salmon or chicken, or serve as a salad topped with goat cheese, roasted peppers and tapenade. Serves 4-6 as a side dish or salad
Cook orzo in a pot of boiling, salted water for 7-9 minutes. Drain well and transfer to a serving bowl. Let cool slightly. Add all ingredients, except Meyer lemon oil and mix well. Adjust seasoning and stir in Meyer lemon oil just before serving. |
