Meyer Lemon Orzo Salad

Serve warm as a bed for roasted or grilled salmon or chicken, or serve as a salad topped with goat cheese, roasted peppers and tapenade. Serves 4-6 as a side dish or salad

  • 2 cups orzo pasta
  • 2 tablespoons chopped scallions
  • 1/4 teaspoon chopped fresh thyme or lemon thyme
  • 1 teaspoon grated lemon or Meyer lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 cup mild extra virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup chopped, peeled and toasted almonds(optional)
  • 1/4 cup Meyer lemon oil
  • salt and pepper

Cook orzo in a pot of boiling, salted water for 7-9 minutes. Drain well and transfer to a serving bowl. Let cool slightly. Add all ingredients, except Meyer lemon oil and mix well. Adjust seasoning and stir in Meyer lemon oil just before serving.
