This is a "master recipe" for a simple glaze that stands on its own, or use it to
enhance other recipes.
Zin Vin AgroDolce glaze has a myriad of applications including:
- Drizzle over figs (See our recipe Figs, Prosciutto and Goat Cheese with Zin Vin AgroDolce Glaze)
- Drizzle over pears with blue cheese
- Use as the base for an elegant vinaigrette for grilled lamb loins, Portobello
mushrooms or beef
- Use to enrich sauces and marinades
(The glaze can be kept covered and refrigerated for about a month or kept in a cool place in your pantry for about a week.)
- 1 cup Katz Late Harvest Zinfandel AgroDolce Vinegar
- 1 TBS Branches Citrus Blossom or Branches Raspberry Flower Honey (optional)
Pour the vinegar in a small saucepan and reduce over medium-low heat. You are looking for it to begin to bubble around the edges and have a "syrupy" consistency (to coat the back of a spoon). You should have about 1/2 cup left.
Turn off the heat and swirl in the honey while the glaze is still warm but off the heat. Depending on its use, you can add pepper, salt, spices, mustard, citrus juice or more honey…use your culinary imagination!
(The glaze can be kept refrigerated for about a month or kept in a cool place in your pantry for about a week.)
