"Chopped" Cucumber and Pepper Relish
Serves 4

  • 1/2 cup diced red onion
  • 1 red pepper, diced
  • 1 1/2 cup chopped tomato
  • 1 medium cucumber, peeled, seeded and diced
  • 1 clove garlic, minced

  • 1/2 teaspoon ground cumin
  • salt & pepper
  • pinch of cayenne (optional)
  • 3 tablespoons Kitchen Line Sauvignon Blanc Vinegar
  • 2 tablespoons Kitchen Line Champagne Vinegar
  • 2 tablespoons fruity extra virgin olive oil
  • 2 tablespoons minced parsley
  • good pinch of Kitchen Line Chef's Herb Blend
TO ASSEMBLE THE RELISH: Place first 5 ingredients in a mixing bowl and toss. Add salt and pepper, cumin, herbs, parsley, vinegars and oil, toss. Taste for seasoning. Let sit for about 15 minutes.

This delicious and versatile relish/salad/sauce can be served over grilled salmon or halibut, or serve on a bed of romaine lettuce sprinkled with goat cheese or feta, or replace the Champagne Vinegar with the Kitchen Line Trio and serve with roasted chicken or pork chops. Enjoy!
