Asparagus with Balsamic
Can be served as either a simple appetizer with thin slices of Parmesan or Pecorino, or for a more elegant presentation, wrap warm spears in Prosciutto, or as a side dish for roasted meats and poultry. Preheat oven to 450 degrees Blanch the asparagus in lightly salted boiling water for 30 seconds. Immerse them immediately in ice water to stop the cooking. Drain and set in baking dish. Coat with olive oil and roast in oven for about 10 minutes. Remove from oven and drizzle with Balsamic, and season with salt & pepper. Serve immediately. |
