Steamed Artichokes with Meyer Lemon

A simple way to replace the traditional use of butter with steamed artichokes.

Serves 4

  • 4 Large Artichokes, tips snipped off with kitchen shears
  • 4 garlic cloves, peeled and thinly sliced (optional)
  • 2 Tablespoons extra virgin olive oil
  • zest and juice from 1 lemon or Meyer lemon
  • 1 teaspoon black peppercorns
  • Kitchen Line Meyer lemon oil
  • salt, to taste

Fill bottom portion of vegetable steamer with water and bring to a boil. Slice off the top half-inch of each artichoke with a sharp knife. Tuck slices of garlic into trimmed artichoke at random. Drizzle olive oil over top, squeeze the lemon juice over the artichokes and sprinkle with salt to taste. Add lemon zest and pepper to boiling water.

Set artichokes over water in steamer and cover, reducing heat to simmer. Cook until inner leaves pull off easily with tongs, about 25 to 40 minutes depending on size and freshness. Remove from steamer, let cool slightly, and serve with a dipping dish filled with Meyer lemon oil. Enjoy!
