Champagne Honey Vinaigrette

This fresh, sweet-flavored dressing can be used as a sauce for grilled lamb chops, spinach salads with pancetta or bacon, or can be tossed with some fresh tomatoes in a pasta salad.

  • 1/4 cup Champagne vinegar
  • 1 tablespoon whole grain mustard
  • 2 teaspoons fresh mint , chopped
  • 1 tablespoon honey
  • 1 teaspoon shallot, finely diced
  • 1 clove garlic, minced
  • 1/2 cup fruity olive oil
  • salt and freshly ground pepper to taste (be generous with the pepper)

Put all ingredients, except oil, in a mixing bowl and mix well. Slowly whisk in the olive oil until thickened. Adjust seasoning and serve.
